INGREDIENTS
Dough
- 1 tablespoon active dry yeast
- 💧 1 ½ cups lukewarm water
- 🍬 ¼ cup white sugar
- 4 ½ cups rice flour, divided
- ½ cup solid vegetable shortening, divided
Filling
- 1 teaspoon vegetable oil
- 🧅 1 large onion, diced
- 🧄 1 clove garlic, chopped
- 🍗 1 ½ pounds shredded cooked chicken meat
- 🍶 ¼ cup soy sauce
- 🍬 2 teaspoons white sugar
- ½ cup diced green onion
- 🧂 1 pinch salt and black pepper to taste
- 1 teaspoon cornstarch, if needed (optional)
STEPS
Dissolve yeast in the lukewarm water; add sugar and beat in 2 1/2 cups rice flour to make a soft sponge. Let it rise in a warm place for about 40 minutes.
Mix in 2 more cups of rice flour and 1/4 cup shortening, then knead on a greased surface with the remaining 1/4 cup shortening. Divide dough into 15 pieces and form into balls.
Heat vegetable oil in a skillet and sauté onions and garlic until translucent (5 minutes). Stir in chicken, soy sauce, sugar, green onion, salt, and black pepper. Thicken with cornstarch if needed.
Flatten dough balls into 4-inch circles, fill with 1 tablespoon of chicken mixture, and seal by pinching and twisting the edges. Place on waxed paper seam-side down.
Prepare the bamboo steamer as per instructions, ensuring filled buns do not touch each other. Steam each batch for 15 minutes over medium-low heat.
