INGREDIENTS
Dry Ingredients
- 2 cups all-purpose flour
- 🧂 ½ teaspoon salt
- 🍫 ½ cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 🌿 ½ teaspoon ground cinnamon
- ☕ 1 teaspoon instant coffee granules
Wet Ingredients
- 🧈 ½ cup butter, softened
- 🍬 ¾ cup white sugar
- 🥚 2 eggs
- 1 teaspoon vanilla extract
Add-ins & Brush
- 🍫 ½ cup miniature semisweet chocolate chips
- 🌰 ½ cup chopped walnuts
- 🥚 1 egg yolk
- 💧 1 tablespoon water
STEPS
Preheat oven to 350°F (175°C). Grease or line a baking sheet with parchment paper.
Combine flour, salt, cocoa powder, baking powder, cinnamon, and coffee granules in a bowl. Set aside.
Beat butter and sugar with an electric mixer until smooth. Add eggs one at a time, beating well after each addition. Mix in vanilla.
Stir dry mix into wet mix until just combined. Fold in chocolate chips and walnuts. Divide dough into two halves and shape into 8x2 inch rectangles.
Brush loaves with egg yolk beaten with water. Bake at 350°F for 20-25 minutes until firm. Cool for 10-12 minutes.
Slice loaves diagonally into ¾ inch slices. Place cut-side up on baking sheets. Reduce oven heat to 300°F (150°C). Bake slices 10-15 minutes on each side until dry. Cool completely.
