INGREDIENTS
Marinade Ingredients
- 1 cup chopped fresh parsley
- ½ cup olive oil
- 🧄 2 cloves garlic, minced
- 1 pinch red pepper flakes, or to taste
- 🧂 Salt to taste
- Freshly ground black pepper to taste
Main Ingredients
- 🍤 1 pound uncooked medium shrimp, peeled and deveined
- 1 sheet heavy-duty aluminum foil
- 🍋 1 lemon, juiced
- 🍋 ½ lemon, sliced into wedges
STEPS
Combine parsley, olive oil, garlic, red pepper flakes, salt, and black pepper in a large bowl. Add shrimp and mix well. Allow to marinate for 10 minutes.
Meanwhile, preheat an outdoor grill for high heat.
Lay 1 sheet of heavy-duty aluminum foil on a flat surface; fold in half. Fold up edges to create a pouch in the middle. Spread marinated shrimp in the pouch and drizzle with lemon juice. Lightly close to make a packet.
Cook the packet on the preheated grill until shrimp are bright pink on the outside and the meat is opaque, about 8 to 10 minutes. Serve with lemon wedges.

💡 For best results, do not overcook the shrimp as they can get rubbery. If you don't have a grill, you can bake the foil packet in a preheated 400°F (200°C) oven for about 10 minutes.Consider adding vegetables like zucchini or cherry tomatoes to the foil packet for a complete meal.Prepare extra packets for parties to ensure everyone gets their own portion.
