INGREDIENTS
Seafood
- 🦐 2 pounds medium shrimp - peeled and deveined
Spices
- 🧂 Salt and pepper to taste
- Cayenne pepper to taste
Vegetables
- 2 pounds chopped okra
- 🍅 1 tomato, chopped
- 🧅 1 cup chopped onion
- 🧄 4 cloves garlic, minced
- ½ cup chopped celery
- ½ cup chopped green bell pepper
- ½ cup chopped green onions
Liquids
- 💧 12 cups water
Condiments
- 1 tablespoon tomato paste
Oils
- ½ cup olive oil
STEPS
Season the shrimp with salt, pepper and cayenne to taste and set aside.
Heat the olive oil in a large pot over medium heat. Add the okra and sauté for 30 minutes, stirring occasionally.
Add the tomato paste, chopped tomato, onion, garlic, celery, and green bell pepper. Sauté for 15 more minutes.
Add the water and season with additional salt and pepper to taste. Bring to a boil, then reduce heat to low and simmer for 45 minutes.
Add the seasoned shrimp and simmer for another 20 minutes.
Finally, add the chopped green onions to the soup and stir thoroughly before serving.
