INGREDIENTS
Vegetables
- 🥔 5 potatoes, peeled and quartered
- 🍄 1 (4 ounce) can sliced mushrooms
- 1 (15 ounce) can mixed vegetables
Protein
- 🍖 1 pound lean ground beef
Condiments and Soups
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1 (10.75 ounce) can condensed cream of celery soup
Seasoning
- 🧂 Salt and pepper to taste
Dairy
- 🧈 3 tablespoons butter
STEPS
Preheat oven to 350°F (175°C). Coat a 9x13 baking dish with cooking spray.
Bring a large pot of salted water to a boil. Cook potatoes until tender, about 15 minutes. Drain, reserving some of the cooking liquid. Mash potatoes with a little reserved liquid and set aside.
In a large skillet, cook ground beef over medium-high heat until browned. Drain fat from the pan.
Stir in mushrooms, mixed vegetables, cream of mushroom soup, cream of celery soup, and salt and pepper. Heat through and pour into the prepared baking dish.
Cover the beef and vegetable mixture with mashed potatoes, dot with butter, and bake in the preheated oven for 30 minutes, or until potatoes are golden and the mixture is hot and bubbly.
