- 🥔 2 ¼ pounds potatoes, scrubbed

- 🥛 2 tablespoons milk

STEPS
Place the potatoes in a large pot and cover with water. Bring to a boil over medium-high heat and cook until tender enough to pierce with a fork, about 15 minutes. Drain and refrigerate overnight.
Peel and grate the potatoes into a large bowl.
Melt butter in a skillet over medium heat. Add grated potatoes, season with salt, and press into a round loaf using a spatula. Sprinkle milk over the potatoes and cover the skillet.
When the potatoes begin to sizzle, reduce heat to low and cook until a brown crust has formed on the bottom, about 30 minutes. Flip the roesti onto a plate to serve.
