INGREDIENTS
Flatbread Crust
- 🍞 8 oz pizza dough
Toppings
- 🍇 4 cups seedless red grapes
- 1 teaspoon fresh rosemary
- 🧀 1/2 cup ricotta cheese
- 🧀 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped fresh parsley
- 2 cups arugula
Dressing
- 1 tablespoon olive oil (for roasting grapes)
- 🧂 1/8 teaspoon salt (for dressing)
- 2 teaspoons olive oil (for dressing)
- Vinegar (amount unspecified for dressing)
STEPS
Preheat the oven to 425°F (220°C) and grease a baking sheet. Unroll pizza dough onto prepared baking sheet and bake for 6 minutes.
Line a 10x15-inch baking pan with foil and arrange grapes in the prepared pan. Drizzle with 1 tablespoon olive oil, sprinkle with 1/2 teaspoon rosemary, and 1/4 teaspoon salt. Toss to coat.
Roast grapes in the pan, stirring once halfway through, until slightly charred (approximately 40 minutes). Remove from oven and pour accumulated juices into a small bowl.
Meanwhile, stir together ricotta, mozzarella, parsley, black pepper, and remaining 1/2 teaspoon rosemary in a small bowl.
Spread the ricotta mixture onto the parbaked crust. Top with roasted grapes and bake until cheese is lightly golden (about 10 minutes).
Prepare dressing: Whisk together reserved grape-roasting juices, vinegar, remaining 2 teaspoons olive oil, and 1/8 teaspoon salt in a bowl.
Toss arugula with the prepared dressing and use it to top the baked flatbread.
