INGREDIENTS
Dry Ingredients
- 2 cups unbleached bread flour
- 1 cup dark rye flour
- 3 tablespoons dry potato flakes
- 2 tablespoons caraway seeds
- 1 ½ tablespoons demerara sugar
- 2 ½ teaspoons instant yeast
- 1 ½ teaspoons sea salt
Wet Ingredients
- 1 cup warm water
- ¼ cup canola oil
- ¼ cup sour pickle juice
STEPS
Place bread flour, rye flour, potato flakes, caraway seeds, demerara sugar, yeast, and sea salt in a large stand mixer and mix thoroughly on low speed.
Add warm water, canola oil, and pickle juice to the dry ingredients and beat together.
Switch to the dough hook attachment and let dough rest for 30 minutes covered with plastic wrap.
Knead the dough with the dough hook until smooth and slightly sticky, 6–8 minutes. Then knead 1–2 more minutes on a floured surface.
Form dough into a ball, coat with oil in a bowl, cover with plastic wrap, and let rise for 1 hour in a warm place.
Shape dough into a log, place in a greased loaf pan, cover with a towel, and let rise for another 60–90 minutes.
Preheat oven to 350°F (175°C), bake bread until golden brown for about 35 minutes or until the internal temperature reaches 190°F (90°C). Tent with foil if browning too quickly.
Remove loaf from pan and cool on a wire rack.
