INGREDIENTS
Cookies
- 🧈 1 cup butter, softened
- 🍚 1 cup white sugar
- 🥚 1 egg
- 3 cups all-purpose flour
- 🧂 ½ teaspoon salt
- 1 (8 ounce) jar raspberry preserves
Glaze
- 2 cups confectioners' sugar
- 2 teaspoons almond extract
STEPS
Preheat the oven to 375°F (190°C). Grease cookie sheets.
In a large bowl, cream together the butter and sugar until smooth. Beat in the egg. Combine the flour and salt; stir into the creamed mixture. Dough will be stiff.
On a lightly floured surface, roll half of the dough to 1/8 inch thickness. Cut into star shapes using a cookie cutter.
Set cookies 1 inch apart onto prepared cookie sheets. Place a teaspoon of jam onto each cookie and spread it toward the points of the stars.
Roll out remaining dough, cut into stars, cut holes in the centers of stars, and place them onto the jam-covered stars.
Bake for 7-10 minutes in preheated oven, until golden around edges. Transfer cookies to wire racks to cool.
Mix confectioners' sugar and almond extract for the glaze, thinning with water as needed. Drizzle glaze over cooled cookies.
