INGREDIENTS
Muffin Batter
- ¾ cup packed brown sugar
- ¾ cup white sugar
- 🧈 ½ cup unsalted butter, softened
- 🥚 2 large eggs
- 1 cup pumpkin purée
- ⅓ cup water
- 1 ¾ cups all-purpose flour
- 1 teaspoon baking soda
- 🧂 1 teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ½ teaspoon ground nutmeg
Streusel Topping
- ⅓ cup packed brown sugar
- 1 tablespoon all-purpose flour
- 🧈 1 tablespoon unsalted butter
- ¼ teaspoon ground cinnamon
STEPS
Preheat the oven to 350°F (175°C). Grease and flour an 18-muffin cup tin.
In a bowl, beat brown sugar, white sugar, and butter together until smooth and creamy. Add eggs and mix.
Mix in pumpkin purée and water.
In a separate bowl, combine flour, baking soda, salt, cinnamon, ginger, and nutmeg.
Gradually stir the dry mixture into the wet mixture. Spoon the batter into the prepared muffin tin.
For the streusel topping, mix brown sugar, flour, butter, and cinnamon using two forks until crumbly. Sprinkle over each muffin.
Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the middle of muffins comes out clean.
