INGREDIENTS
Beef Roast
- 1 (5 pound) bone-in beef rib roast
- 🧄 8 cloves garlic, quartered
- 1 teaspoon freshly ground black pepper
- 🧂 ¾ teaspoon salt
Yorkshire Pudding
- 🥚 2 cups large eggs
- 🥛 2 cups milk
- 🧂 1 pinch salt
- 2 cups all-purpose flour
- ½ cup pan drippings from prime rib
Au Jus
- 🍷 ½ cup white wine
- 2 cups beef stock
STEPS
Place roast, bone-side down, in a roasting pan. Use a sharp paring knife to poke 24 small holes 1 inch deep all over roast. Stuff each hole with garlic. Sprinkle with black pepper and salt. Allow roast to stand at room temperature for 2 hours.
Beat together eggs and milk with a pinch of salt in a bowl. Stir in flour until smooth. Cover Yorkshire pudding batter and refrigerate.
Preheat the oven to 450°F (230°C). Roast beef for 30 minutes, then reduce temperature to 350°F (175°C) and cook until the beef reaches 140°F, about 1 hour.
Remove roast, cover with foil and let rest. Measure 1/2 cup beef fat and divide among muffin tins. Preheat tins at 425°F for 10 minutes, fill with pudding batter and bake 20-25 minutes.
Prepare au jus by simmering wine in the roasting pan over medium-high heat, scraping pan drippings. Add beef stock and simmer for 10 minutes. Strain and serve.
