INGREDIENTS
Dough
- 💧 1 ¼ cups warm water
- 1 ½ tablespoons granulated sugar
- 1 (1/4-ounce) envelope active dry yeast
- 3 ½ cups bread flour
- 🧂 1 teaspoon kosher salt
- 💧 2 tablespoons hot water
Cheese Sauce
- 🥛 1/3 cup whole milk
- 8 ounces processed cheese
- 1 tablespoon unsalted butter
- ½ teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- 🧂 1/4 teaspoon kosher salt
Toppings
- 2 cups part-skim mozzarella cheese
- 1 tablespoon unsalted butter, melted
- 🍕 Pepperoni slices (optional)
- 🧂 Pretzel salt
STEPS
Mix warm water, sugar, and yeast in a stand mixer bowl. Whisk and let foam for about 5 minutes.
Add flour and salt to the yeast mixture and mix on low for 20 seconds. Knead on medium speed for 5 minutes until dough is smooth.
Transfer dough to a greased bowl, cover, and let it double in size (25-30 minutes).
Preheat oven to 425°F (230°C). Prepare a pizza pan with cooking spray and shape dough into a 15-inch diameter with a defined crust edge.
Combine baking soda with hot water and brush on the crust. Bake crust for 8 minutes.
Make cheese sauce by simmering milk and melting processed cheese over low heat. Add butter, onion powder, paprika, garlic powder, and salt. Whisk until smooth.
Spread cheese sauce on the par-baked crust. Top with mozzarella cheese and pepperoni slices, if using.
Brush the crust with melted butter, sprinkle with pretzel salt, and bake until melted and browned, about 8 minutes.
Cool for 5 minutes before slicing and serving.
