STEPS
Gather all ingredients.
Slice peeled potatoes and shred them using a food processor fitted with the grater attachment. Squeeze shredded potatoes in a cheesecloth to remove moisture.
Measure 2 cups of shredded, drained potatoes and transfer to a medium bowl. Add egg, flour, onion, and salt, and mix until combined.
Heat 1/4 inch of oil in a heavy-bottomed skillet over medium-high heat. Place spoonfuls of potato mixture into the oil, flattening them into patties. Fry until golden brown, 4-5 minutes per side.
Drain cooked latkes on a paper towel-lined plate. Repeat frying with remaining potato mixture.
Serve the latkes warm with applesauce, sour cream, or smoked salmon as desired.
