INGREDIENTS
Dry Ingredients
- 🥥 5 ½ cups flaked coconut
- ⅔ cup all-purpose flour
- 🧂 ⅛ teaspoon salt
- 🍍 1 cup finely diced dried pineapple
- ½ cup finely chopped salted macadamia nuts
Wet Ingredients
- 🥛 1 (14 ounce) can sweetened condensed milk
- 1 teaspoon rum flavored extract
- 1 teaspoon vanilla extract
STEPS
Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
Combine flaked coconut, diced pineapple, all-purpose flour, macadamia nuts, and salt in a large bowl. Stir in sweetened condensed milk, rum extract, and vanilla extract until well combined.
Drop dough in golf ball-sized scoops onto the prepared baking sheets, placing them 2 inches apart.
Bake until coconut is toasted and edges turn lightly golden, approximately 12 to 15 minutes.
