INGREDIENTS
Filling
- 1 pound ground pork
- 🧄 4 cloves minced garlic
- ½ cup finely chopped green onions
- 3 tablespoons very finely minced fresh ginger
- 2 tablespoons soy sauce
- 1 teaspoon soy sauce
- 1 teaspoon sesame oil
- 1 pinch cayenne pepper
- 1 ½ cups finely chopped green cabbage
Dough
- 2 ½ cups all-purpose flour
- ¾ teaspoon kosher salt
- 💧 1 cup hot water, about 130 - 150 F
Dipping Sauce
- ¼ cup seasoned rice vinegar
- ¼ cup soy sauce
Cooking
- 6 tablespoons vegetable oil for frying, divided
- 💧 8 tablespoons water for steaming
STEPS
To make the filling: Mix ground pork, green onions, garlic, ginger, soy sauce, sesame oil, and cayenne pepper in a bowl. Top with chopped green cabbage and mix until combined. Chill in the refrigerator for 1 hour.
To make the dough: Combine flour and kosher salt in a bowl, slowly mix in hot water. Knead on a floured surface for 3-5 minutes until smooth. Cover with plastic and let rest for 30 minutes.
Divide dough into 4 pieces and roll each piece into logs. Cut each log into 6 equal pieces. Roll out each piece into thin wrappers about 3 ½ inches in diameter.
Fill the wrappers: Moisten the edges of a wrapper. Add pork filling to the center, fold edges, seal with pleats, and flatten the bottom lightly. Place on floured plate.
Make the dipping sauce: Mix seasoned rice vinegar and soy sauce in a small bowl.
Cook the pot stickers: Heat oil in a skillet, cook pot stickers flat-side down until golden. Add water, cover to steam for 3 minutes, uncover and cook until bottoms are crispy.
