INGREDIENTS
Nuts and seeds
- 🥜 1 ¼ cups almonds, divided
- 🌻 1 ¼ cups sunflower seeds, divided
- 2 cups shredded unsweetened coconut
Fruit
- 🍑 1 cup diced dried apricots
Sweeteners
- 🍯 ½ cup honey
Spices and seasonings
- 🌰 ¼ cup ground cinnamon, or as needed
- 1 teaspoon vanilla extract
- 🧂 ½ teaspoon salt

- 🥥 1 ½ cups coconut oil
STEPS
Place 3/4 cups almonds and 3/4 cups sunflower seeds into a food processor; chop until nuts are in 1/4-inch pieces for about 1 to 2 minutes. Remove from food processor and pour into a bowl. Place remaining almonds and sunflower seeds into the processor; roughly chop into larger pieces for about 1 minute. Mix these with shredded coconut and diced apricots.
Combine coconut oil, honey, ground cinnamon, vanilla extract, and salt in a saucepan over medium-low heat; cook until the mixture bubbles and its color lightens, about 300 seconds.
Pour the coconut oil mixture over the fruit and nut mix. Stir until the combination takes on a wet sand consistency, roughly 60 seconds.
Line a baking sheet with waxed paper. Spread the granola mixture onto the sheet. Cover with another sheet of waxed paper and press down until tightly packed.
Let bars cool until hardened over 2 to 3 hours. Once firm, cut into desired shapes.
