INGREDIENTS
Dough and Flour
- 1 pound fresh pizza dough
- Flour for dusting
Oils and Seasonings
- 4 tablespoons olive oil
- 🧂 ½ teaspoon kosher salt
- ¾ teaspoon freshly ground black pepper
- 2 tablespoons chopped fresh oregano
- 2 tablespoons fresh thyme leaves
- Additional thyme for garnish
Mushrooms and Vegetables
- 🍄 ½ pound cremini mushrooms, thinly sliced
- ½ pound maitake mushrooms, broken into small clusters
- 1 (5 ounce) package fresh baby spinach
Cheese and Dairy
- 🧀 1 cup whole milk ricotta cheese
- 🧀 ½ cup finely grated Pecorino Romano cheese
- 🧀 Shaved Pecorino Romano cheese, for garnish
- 🧀 1 cup shredded part-skim mozzarella cheese

STEPS
Preheat the oven to 450°F (230°C) and place a pizza stone or baking sheet on the middle oven rack.
Roll out the pizza dough on a lightly floured surface into a 14-inch circle. Transfer it to parchment paper or a lightly dusted cookie sheet, cover with a kitchen towel, and let stand at room temperature.
Heat 2 tablespoons of olive oil in a skillet over medium heat. Cook cremini and maitake mushrooms for 6-8 minutes until browned and tender. Stir in oregano, thyme, ¼ teaspoon salt, and ¼ teaspoon pepper, then transfer the mixture to a bowl.
Add 1 tablespoon of olive oil to the skillet. Cook spinach with ¼ teaspoon pepper for about 2 minutes until wilted. Drain on a paper towel-lined plate.
Combine ricotta, Pecorino Romano, garlic, ¼ teaspoon salt, and ¼ teaspoon pepper in a bowl. Brush the dough with 1 tablespoon olive oil, spread the ricotta mixture evenly over the dough, and leave a 1-inch border. Sprinkle mozzarella over ricotta, then layer with cooked mushrooms and spinach.
Carefully transfer the pizza on parchment paper to the preheated pizza stone or baking sheet in the oven. Bake for 15-18 minutes until the crust is golden brown and cheese is bubbly.
Let the pizza cool for 5 minutes after baking. Garnish with additional thyme, pepper, and Pecorino Romano shavings before serving.
