INGREDIENTS
Base
- 🍚 1 cup white rice
Vegetables & Mushrooms
- 🍄 8 ounces cremini mushrooms
Liquids
- 🥣 1 1/2 cups low-sodium vegetable stock
Nuts and Fruits
- 1/4 cup pine nuts
- 1/4 cup dried cherries
Seasonings
- 🧂 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Oil
- 3 teaspoons olive oil
STEPS
Preheat the oven to 350°F (175°C).
Heat 2 teaspoons of olive oil over medium heat in a large oven-safe skillet. Add mushrooms and cook, stirring occasionally, until browned (about 8 minutes).
Add the remaining 1 teaspoon of olive oil and the rice to the skillet. Cook, stirring occasionally, until the rice is fragrant (about 2 minutes).
Stir in the vegetable stock, pine nuts, dried cherries, salt, and black pepper. Bring the mixture to a boil.
Cover the skillet and bake in the preheated oven until the liquid is absorbed (about 17 minutes).
Let the dish stand, covered, for 5 minutes. Fluff the rice with a fork and sprinkle with fresh basil if desired.
