INGREDIENTS
Dry Ingredients
- 1 ½ cups Mochiko (sweet white rice flour)
- 1 cup tapioca flour
- ½ cup granulated sugar
- 1 tablespoon baking powder
- 🧂 ¼ teaspoon kosher salt
Wet Ingredients
- 🥛 ⅔ cup whole milk
- 3 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 🥚 1 large egg
For Frying and Decoration
- Canola oil for frying
- 1 ¼ cups powdered sugar
- 🥛 2 tablespoons whole milk
- ½ teaspoon vanilla extract
- 1 tablespoon ground freeze-dried fruit such as strawberry, mango, or dragon fruit
STEPS
Combine rice flour, tapioca flour, sugar, baking powder, and salt in the bowl of a stand mixer. Beat on low speed until combined, about 1 minute. Add milk, melted butter, vanilla, and egg. Mix until a smooth dough forms, 1-2 minutes.
Lightly dust a clean work surface with rice flour. Divide dough into quarters and roll into 18-inch ropes. Cut into 1-inch pieces and roll into balls (about 72 total).
Cut 9 pieces of parchment paper (5x5 inches). Arrange 8 dough balls into a ring on each parchment piece (about 3.5 inches in diameter), sealing with water.
Heat 2 inches of canola oil in a Dutch oven to 350°F (175°C). Place up to 3 dough rings (with the parchment) into the oil. Remove parchment when dough floats. Fry until golden, 2-3 minutes, turning halfway.
Transfer fried donuts to a wire rack lined with paper towels for cooling. Repeat with remaining dough. Cool for 10 minutes.
For the glaze, whisk powdered sugar, 2 tablespoons milk, and vanilla in a bowl. Add extra milk as needed for a thick glaze. Dip donuts and set on rack.
Mix 2 teaspoons freeze-dried fruit powder into the remaining glaze. Dip second batch of donuts and sprinkle with additional fruit powder.
