INGREDIENTS
Protein
- 🍗 500g chicken thighs, diced
- 1 can black beans, drained
Vegetables
- 🥔 3 medium potatoes, diced
- 1 bell pepper, diced
- đź§… 1 onion, chopped
- đź§„ 2 garlic cloves, minced
- 🍅 1 cup crushed tomatoes
- 🌽 1 cup corn kernels
Seasonings
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp paprika
- đź§‚ Salt to taste
- Black pepper to taste
- 1 tbsp olive oil
Liquid
- 2 cups chicken broth
- 1 cup water
STEPS
Heat olive oil in a large pot over medium heat.
Add chicken and cook until browned on all sides. Remove and set aside.
In the same pot, sauté onion, garlic, and bell pepper until softened.
Stir in cumin, chili powder, paprika, salt, and black pepper.
Add diced potatoes, crushed tomatoes, corn, and black beans to the pot.
Return the chicken to the pot and pour in chicken broth and water.
Bring to a boil, then reduce heat to low and simmer for 45 minutes, stirring occasionally.
Serve hot, garnished with fresh cilantro if desired.
