INGREDIENTS
Butter and Seasoning
- 🧈 3 tablespoons unsalted butter, softened
- 🧄 1 tablespoon garlic, minced
- 1 tablespoon fresh parsley, chopped
- 2 teaspoons fresh oregano, chopped
- 1 teaspoon fresh rosemary, chopped
- 🧂 1/2 teaspoon salt, or to taste
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon paprika
Fish and Garnish
- 4 (6 ounce) cod filets
- 1 tablespoon extra virgin olive oil
- 4 sprigs fresh parsley for garnish (optional)
Lemon
- 🍋 8 lemon slices (approx. 2 per filet)
STEPS
Preheat the oven to 400 degrees F (200 degrees C).
Prepare the herb butter by combining softened butter, minced garlic, parsley, oregano, rosemary, salt, black pepper, and paprika on a cutting board. Mix thoroughly.
Pat cod filets dry. Lay 2 lemon slices under each filet in a baking pan. Evenly distribute the herb butter mixture over the filets and top each with 2 more lemon slices.
Bake the cod in the preheated oven until it flakes easily with a fork, approximately 13-15 minutes.
Drizzle with extra virgin olive oil and garnish with fresh parsley before serving.
