INGREDIENTS
Crepe Batter
- 💧 1 cup water
- 🥛 ¾ cup milk
- 🥚 3 eggs
- 🧈 5 tablespoons melted butter
- 🧂 ½ teaspoon salt
- 1 teaspoon vanilla extract
- 🌾 1 ½ cups all-purpose flour
Filling
- 1 (16 ounce) package cottage cheese
- 1 (8 ounce) package farmers cheese
- ¼ cup sour cream
- 🍬 2 tablespoons white sugar
- 1 teaspoon vanilla extract
- 🧂 1 pinch salt
For Cooking Blintzes
- 🧈 2 tablespoons butter, or as needed
STEPS
Blend the water, milk, eggs, melted butter, salt, vanilla extract, and flour until smooth. Refrigerate batter for at least 1 hour.
Prepare the filling by blending cottage cheese, farmers cheese, sour cream, sugar, vanilla extract, and salt until smooth.
Heat 1 teaspoon of butter in an 8-inch skillet over medium heat. Cook crepes by adding 2 tablespoons of batter, swirling to coat the pan. Cook the crepe for 1–2 minutes until opaque and set. Repeat with remaining batter.
Place 1 ½ tablespoons of filling on the crepe and fold into a compact roll.
Pan-fry the rolled blintzes in butter until golden brown and filling is hot, about 1–2 minutes per side.
