INGREDIENTS
Dry Ingredients
- 6 cups old-fashioned oats
- 1 ½ cups finely chopped pecans
- ½ cup finely chopped almonds
- ¾ cup minced dates
- ¾ cup minced raisins
- ⅔ cup minced dried cranberries
Wet Ingredients
- ½ cup vegetable oil
- ½ cup pure maple syrup
- 💧 ⅓ cup boiling water
Spices
- 2 teaspoons ground cinnamon
- 1 teaspoon ground cardamom
STEPS
Preheat oven to 325°F (165°C).
Mix oats, pecans, and almonds together in a bowl.
Whisk vegetable oil, maple syrup, and boiling water together in a measuring cup. Pour over oat mixture and stir until evenly coated.
Spread the oat mixture evenly onto 2 baking sheets.
Bake in the preheated oven for 12 minutes. Remove, stir, and bake for another 12 minutes. Stir again and bake for the final 12 minutes or until granola is golden brown. Cool to room temperature.
Mix cinnamon and cardamom in a container with a lid. Add dates, raisins, and dried cranberries. Cover and shake the container until the fruits are evenly coated.
Once the granola has cooled, mix the spiced dried fruits evenly into the granola.
