INGREDIENTS
Meat
- 🥓 4 slices thick-cut bacon
Vegetables
- 🧅 4 small yellow onions
- 🌱 1 bunch scallions
Dry Ingredients
- 🍝 16 oz macaroni
- 🌾 1/4 cup all-purpose flour
- 1 cup panko breadcrumbs
Dairy
- 🧈 6 tablespoons butter
- 🥛 5 cups whole milk
- 2 1/2 cups sharp Cheddar cheese
- 6 ounces Gruyere cheese
Condiments & Spices
- 1 tablespoon Dijon mustard
- 1 teaspoon hot sauce
- 1 pinch ground nutmeg
STEPS
Cook the bacon until crispy in a large pan, then chop into small pieces.
Slice the onions thinly and cook in the bacon fat until caramelized.
Boil the macaroni according to package instructions and drain.
Melt butter in a large saucepan, add the flour and whisk to make a roux.
Gradually whisk in the milk, Dijon mustard, hot sauce, and nutmeg. Cook until thickened.
Stir in the Cheddar and Gruyere cheese until melted and smooth.
Combine the cooked macaroni and cheese sauce, then mix in caramelized onions and bacon.
Transfer to a baking dish, top with scallions and panko breadcrumbs.
Bake in a preheated oven at 350°F (175°C) until bubbly and golden, about 20 minutes.
