INGREDIENTS
Base Ingredients
- cooking spray
- 4 cups all-purpose flour
- 1/4 cup white sugar
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 🧈 1/2 cup butter, softened
- 1 cup buttermilk
- 🥚 1 egg, beaten
- 1/4 cup Irish cream liqueur (such as Baileys®)
- 10 ounces raisins
Glaze
- 🧈 1/4 cup butter
- 1/4 cup buttermilk
- 1/4 cup Irish cream liqueur (such as Baileys®)
STEPS
Preheat oven to 375°F (190°C). Grease a baking sheet with cooking spray.
Mix flour, sugar, baking powder, baking soda, and salt together in a large bowl. Add softened butter and mix until evenly moistened.
Make a well in the center of the flour mixture. Pour 1 cup buttermilk, egg, and 1/4 cup Irish cream liqueur into the well, and add raisins. Knead until the dough is well combined.
Form dough into a disk and cut an 'X' into the top. Place on the prepared baking sheet and set aside.
Melt butter in a small saucepan over medium-low heat. Stir 1/4 cup buttermilk and 1/4 cup Irish cream liqueur into the melted butter until smooth. Brush generously over the dough.
Bake in preheated oven, brushing glaze onto the loaf every 15 minutes, until fully cooked (about 45 minutes). Cool on the pan for 10 minutes before transferring to a rack to cool completely.
