Add lentils, tomato sauce, vinegar, and brown sugar. Bring to a boil, then reduce to low heat. Simmer uncovered for 15 minutes and keep warm.

Trim carrots to about 7 inches. Whisk together brown sugar, water, soy sauce, and liquid smoke in a large saucepan.

Add carrots and cover with additional water. Bring to a boil over high heat, then reduce to medium-low. Simmer covered until carrots are tender, 10 to 15 minutes. Keep warm and drain.

Serve cooked carrots in buns. Top with chili, cheese, and reserved onion. Optionally add mustard.
