INGREDIENTS
Pesto Sauce
- 🧄 4 cloves garlic
- 🌿 2 cups packed fresh basil leaves
- ⅓ cup pine nuts
- ½ cup extra-virgin olive oil
- 🧀 ½ cup freshly grated Parmesan cheese
- 🍋 1 ½ tablespoons fresh lemon juice
- ¾ teaspoon red pepper flakes
Steak
- 6 (6 ounce) flat iron steaks
- 🧄 2 large cloves garlic, minced
- 🧂 salt and pepper to taste
STEPS
Chop garlic cloves in a food processor until minced. Add basil leaves and pine nuts and pulse a few times to combine. Slowly pour in olive oil while mixing. Scrape down the sides as needed. Add Parmesan cheese, lemon juice, and red pepper flakes. Blend until smooth and season with salt and pepper.
Preheat an outdoor grill to medium-high heat and lightly oil the grate.
Rub steaks with minced garlic and season with salt and pepper.
Grill steaks for approximately 4 minutes per side for medium doneness. Baste occasionally with pesto during grilling. Once done, top steaks with remaining pesto and serve.
