INGREDIENTS
Meat
- 🥩 1 pound ground beef
Seasoning
- 2 teaspoons gochujang (Korean hot pepper paste)
- 🧂 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1 tablespoon soy sauce
- 2 teaspoons grated fresh ginger (heated to 150°F or soaked in vinegar)
- 🧄 4 cloves garlic, finely minced
- 🧅 1/3 cup thinly sliced green onions, plus more for garnish
Binding Agent
- 1/2 cup finely crushed buttery round crackers (such as Ritz®)
Sauce
- 🧄 4 cloves garlic, minced
- 2 tablespoons rice wine vinegar
- 3/4 cup beef broth or water
- 1/3 cup brown sugar
- 1/3 cup soy sauce
- 1 tablespoon gochujang (Korean hot pepper paste)
- 1 teaspoon sesame oil
- 1 teaspoon Sriracha hot sauce
- 2 teaspoons cornstarch
- 💧 1 tablespoon water
Garnish
- Toasted sesame seeds
- 🧅 Green onions
STEPS
Add ground beef to a bowl and spread gochujang evenly over the surface. Season with salt, pepper, and soy sauce. Add ginger, garlic, green onions, and crackers. Mix with a fork until combined.
Cover and refrigerate the mixture for about 30 minutes.
Preheat the oven to 450°F (220°C).
Form the mixture into 12 meatballs using wet hands. Place them in a cast iron skillet.
Bake meatballs in the preheated oven until browned, about 20 minutes.
Transfer meatballs to a plate. Drain grease from skillet, leaving about 1 teaspoon.
Prepare the sauce: In the same skillet, cook garlic over medium-high heat for 1 minute. Add rice vinegar, soy sauce, brown sugar, broth, gochujang, sesame oil, and Sriracha. Simmer until reduced by one-third.
Mix cornstarch with water to form a slurry and stir into the sauce. Simmer until reduced by half.
Add meatballs back into the skillet and baste with the sauce. Simmer until meatballs are fully coated and heated through.
Garnish with toasted sesame seeds and green onions. Serve immediately.
