INGREDIENTS
Cooking Oil
- 1 tablespoon peanut oil
Vegetables
- 🧅 1/4 cup onion
- 1 cup frozen mixed vegetables
- 2 teaspoons rice vinegar
Grains / Rice
- 🍚 3 cups cooked rice
Spices & Seasonings
- 1/2 teaspoon ground ginger
- 1/4 teaspoon garlic powder
- 🧂 1/2 teaspoon kosher salt
- 1/4 teaspoon pepper
Other Ingredients
- 🧈 2 tablespoons butter
- 1 tablespoon soy sauce, plus more to taste
- 1/4 cup mayonnaise
- 1 tablespoon Sriracha
- 🍋 1 teaspoon lemon juice
STEPS
Heat peanut oil over high heat in a large deep skillet or wok. Add onion and cook until lightly browned, about 2 minutes. Add hot dogs and cook until browned. Add rice and sesame oil, stir for 1 minute. Stir in ground ginger, garlic powder, kosher salt, and pepper.
Spread rice mixture into an even layer. Cook undisturbed until rice is lightly toasted, about 2 minutes. Add mixed vegetables, stir, and cook undisturbed for another 2 minutes. Push rice to the sides making space in the center.
Add butter in the center and let it melt. Crack eggs into the center and scramble. Once cooked, fold eggs into the rice mixture. Stir in rice vinegar and soy sauce. Cook for 1 minute. Remove from heat.
Combine mayonnaise, Sriracha, and lemon juice. Drizzle this mixture over the fried rice and sprinkle with green onions before serving.
