- 1 (3 pound) beef eye of round roast

STEPS
Preheat the oven to 500 degrees F (260 degrees C).
Season the roast with salt and pepper.
Place the roast in a roasting pan or baking dish without covering or adding water.
Roast at 475 degrees F (245 degrees C) for 21 minutes (7 minutes per pound), then turn off the oven and let roast sit for 2 1/2 hours without opening the door.
Remove the roast and check the internal temperature to ensure it's at least 145 degrees F (65 degrees C). Carve into thin slices and serve.
