INGREDIENTS

- 🧀 4 ounces cream cheese, softened
- 🌿 1/2 cup fresh cilantro leaves
- 🥚 8 large eggs, divided
Seasoning
- 🧂 Salt to taste
- 🧂 Pepper to taste

- 🧈 3 tablespoons butter, divided
STEPS
Mix cream cheese and cilantro in a bowl. Season with salt and pepper.
Heat 1/4 of the butter in a well-seasoned omelet pan over medium-high heat until bubbling. Swirl it around in the pan.
Before the butter browns, beat 2 eggs and pour into the pan. Reduce heat.
Allow the omelet to set for about 10 seconds, then push it to one side of the pan to let raw egg flow to cleared space. Repeat once more.
Remove skillet from heat and add 1/4 of the herbed cream cheese in a line along the middle of the omelet. Season with salt and pepper.
If needed, return the pan to medium heat for 30 seconds if the omelet hasn’t set completely.
Slide the omelet onto a plate, rolling it up to enclose the filling. Repeat for remaining 3 omelets.
