INGREDIENTS
Vegetables
- 🧄 2 cloves garlic, peeled
- 🎃 4 cups butternut squash, peeled and cubed
Oils & Fats
- 2 tablespoons olive oil
- 🥛 2/3 cup heavy cream
Broths & Base
- 4 cups chicken broth
Spices & Seasonings
- 2 tablespoons harissa paste
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1 1/2 tablespoons brown sugar
STEPS
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Toss butternut squash, onion, and garlic with olive oil. Spread evenly on the baking sheet.
Roast in the oven until tender and slightly caramelized, 25–30 minutes.
Place the roasted vegetables into a blender. Add chicken broth, harissa paste, cumin, smoked paprika, and brown sugar. Blend until smooth.
Transfer the blended soup to a stockpot. Bring to a boil, reduce heat, and simmer for 10 minutes. Stir in heavy cream and season with salt and pepper.
Serve hot with a swirl of heavy cream if desired.
