INGREDIENTS
Main Dish
- 🦐 1 lb shrimp, peeled and tails on
- Bamboo skewers
- 1 tbsp canola oil
- 🧄 2 garlic cloves, minced
Salsa
- 🍋 1 lime, halved
- 🍈 1 cup cantaloupe, diced
- 🥑 1 avocado, diced
STEPS
Preheat grill.
Slice lime in half. In a small bowl, squeeze juice from one half of the lime; reserve the other half for garnish.
Add diced cantaloupe, avocado, and the lime juice to a bowl and gently mix to create salsa.
Peel shrimp, leaving the tails on, and skewer them on bamboo skewers.
In a small dish, mix together canola oil and minced garlic, then coat shrimp with oil-garlic mixture.
Grill shrimp for 4 to 5 minutes or until cooked through.
Top grilled shrimp with salsa, garnish with reserved lime wedges, and serve.
