INGREDIENTS
Proteins
- 8 ounces andouille sausage, cut into 1/4-inch cubes
- 8 ounces chicken thighs, cut into small pieces
- 4 ounces smoked ham, diced
Vegetables & Legumes
- 🧅 1 cup onion, diced
- 1 cup green bell pepper, diced
- 2/3 cup celery, diced
- 3/4 cup okra, sliced
- 1 cup lentils, rinsed
- 1/4 cup chopped Italian parsley
- 1/3 cup green onions
Broth & Sauces
- 6 cups low-sodium chicken broth
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon hot sauce
Spices & Pantry
- 2 tablespoons olive oil
- 🧂 1/4 teaspoon kosher salt, plus more to taste
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried oregano
Optional Serving
- 🍚 2 cups cooked white rice
- Additional green onions, as needed
STEPS
Add andouille sausage to a dry soup pot over medium heat and cook, stirring, until the sausage begins to brown, a few minutes.
If needed, add olive oil to adjust the amount of fat and then add onions, green pepper, celery, and 1/4 teaspoon of salt. Cook, stirring, until the onions turn translucent, about 5 minutes.
Add paprika, cumin, black pepper, thyme, and oregano. Cook, stirring, for 2 more minutes.
Stir in the broth, raise the heat to high, and bring to a simmer. Reduce heat to medium low and stir in chicken, ham, and okra.
Cook for 10 minutes and then stir in lentils. Simmer the soup, stirring occasionally, until the lentils are tender, about 1 hour.
Stir in Worcestershire sauce, hot sauce, parsley, and green onions. Cook for another few minutes and season to taste with salt.
Serve hot with rice, more green onions, and a shake of cayenne pepper if desired.
