INGREDIENTS

- Butcher's twine
STEPS
Preheat a charcoal grill to 375°F (175°C) and lightly oil the grate.
Lay flank steak flat on a work surface. Cut horizontally to create a pocket, leaving ½ inch uncut at the far edge.
Arrange butcher's twine on a plate and place steak on top. Season with salt and pepper. Add a layer of spinach, feta cheese, olives, and optional bacon.
Roll the steak tightly, pressing the filling inside. Tie securely with butcher's twine.
Grill over direct heat, turning at least once, until the steak is firm with a pink center and internal temperature reaches 140°F (60°C). Cook 6-7 minutes per side.
