INGREDIENTS
Base Cake Ingredients
- 1 cup rolled oats
- 💧 1 ¼ cups boiling water
- 🧈 ½ cup butter
- 1 cup white sugar
- 1 cup packed brown sugar
- 🥚 2 eggs
- 1 ⅓ cups all-purpose flour
- 1 teaspoon baking soda
- 🧂 ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 1 teaspoon vanilla extract
Icing Ingredients
- 🧈 6 tablespoons melted butter
- 1 ½ cups packed brown sugar
- ¾ cup evaporated milk
- 1 ½ cups flaked coconut
- 1 ½ cups chopped walnuts
- 1 teaspoon vanilla extract
STEPS
Pour boiling water over rolled oats and let stand.
Cream butter and sugars together in a large mixing bowl. Add eggs and blend.
Sift together flour, baking soda, salt, cinnamon, and nutmeg. Mix into the sugar and egg mixture.
Add vanilla extract and softened oats mixture. Blend well.
Pour batter into a greased 9 x 13-inch baking pan.
Bake in a preheated oven at 350°F (175°C) for 30-40 minutes.
Prepare icing by mixing melted butter, brown sugar, evaporated milk, flaked coconut, chopped walnuts, and vanilla extract.
Pour icing over the hot cake.
Place cake under the broiler for 5-10 minutes, watching carefully to avoid burning the topping.
Serve hot or let cool.
