INGREDIENTS
Meat
- 8 ounces pancetta bacon, thickly sliced
Oils
- 1 teaspoon olive oil, or as needed
- 1 cup olive oil, or as needed
- 4 teaspoons extra-virgin olive oil, or to taste
Dough
- 12 ounces pizza dough, or more to taste, cut into quarters
Flour
- 1 tablespoon all-purpose flour, or as needed
Cheese
- ½ cup ricotta cheese
- ¼ cup freshly grated Parmigiano-Reggiano cheese, or to taste
Seasoning
- 2 teaspoons chopped fresh thyme, or to taste
- ground black pepper to taste
Fruit
- 20 slices fresh peach
STEPS
Preheat the oven to 475°F (245°C) and line baking sheets with aluminum foil.
Sprinkle pancetta into a cold skillet and drizzle 1 teaspoon olive oil over pancetta. Cook and stir over medium heat until browned and caramelized, about 5 to 10 minutes. Let cool in the skillet.
Roll each dough quarter into a thin crust (about 1/8-inch thick). Stretch evenly and let rest for 5 minutes.
Heat about 1 cup olive oil to a depth of 1/2-inch in a cast iron skillet. Fry each dough piece on both sides until browned and cooked through, around 2 minutes per side. Drain on paper towels.
Assemble the pizzas: Spread 2 tablespoons of ricotta cheese on each crust. Sprinkle 1/2 teaspoon fresh thyme, pancetta, black pepper, and 5 peach slices. Add 1 tablespoon of Parmesan-Reggiano and drizzle 1 teaspoon olive oil on top.
Bake in the preheated oven until cheese is melted and peaches are browned, about 12 to 15 minutes. Let cool for 5 minutes before serving.
