INGREDIENTS
Vegetable
- 🧅 ½ onion, sliced
- ½ green bell pepper, sliced
Pantry
- 2 tablespoons vegetable oil, divided
- 🧂 Salt to taste
- 🌮 4 flour tortillas
Protein
- 🥩 ½ pound cooked steak, cut into 1/4-inch thick pieces
Dairy
- 🧀 1 cup shredded Mexican cheese blend
STEPS
Heat 2 teaspoons of vegetable oil in a skillet over medium heat; cook and stir onion and green bell pepper until onions are softened, about 5 to 10 minutes. Season with salt and transfer to a bowl.
Brush one side of each tortilla with remaining vegetable oil. Place one tortilla, oil-side down, in the skillet. Layer with half the steak, onion mixture, and cheese. Top with another tortilla, oil-side up. Press down with a spatula.
Cook the assembled quesadilla over medium heat until cheese is melted, and tortillas are browned, about 3 to 4 minutes per side. Remove from skillet and cut into wedges. Repeat for the second quesadilla.
