INGREDIENTS
Starter
- 1 ½ cups bread flour, divided
- 💧 ¾ cup water, divided
Dough
- 5 teaspoons active dry yeast
- 🍚 1 teaspoon white sugar
- 💧 2 cups warm water (110°F/45°C)
- 6 cups bread flour
- 🧂 2 teaspoons salt
STEPS
To make the starter: Combine 1/2 cup flour and 1/4 cup water in a bowl with a lid; stir well. Cover and let sit at room temperature overnight. Repeat process for 3 days, adding 1/2 cup flour and 1/4 cup water each day.
Dissolve yeast and sugar in warm water in a large bowl. Let stand until creamy, about 10 minutes.
Break the starter into small pieces. Combine with yeast mixture. Stir in 4 cups of flour and salt. Gradually stir in remaining flour, 1/2 cup at a time. Knead on a floured surface until smooth and elastic, approximately 8 minutes. Cover and let rise until doubled in size.
Divide the dough in half. Knead each piece for 2 to 3 minutes. Shape into tight ovals. Place on corn meal-dusted pans and stretch to 15x12-inch ovals. Dust with flour. Cover and let rise in a warm place until doubled in size.
Preheat oven to 425°F (220°C). Bake for 30-40 minutes, misting with water 3 times during the first 15 minutes. Loaves are done when bottoms sound hollow. Cool on wire racks before serving.
