INGREDIENTS
Protein
- 🥓 6 slices bacon, chopped
- 🥚 3 large eggs
Vegetables
- 🧅 1 onion, chopped
- 1 ½ tablespoons chopped fresh parsley

- 🧀 2 cups shredded American cheese

- ¾ cup buttermilk baking mix
STEPS
Preheat the oven to 350°F (175°C) and grease two mini muffin pans.
In a large skillet over medium heat, fry chopped bacon and onion together for about 5 minutes or until bacon is crisp. Drain and set aside.
In a medium bowl, beat eggs and stir in baking mix, parsley, shredded cheese, cooked bacon, and onion. Mix well.
Spoon the mixture into the prepared muffin cups.
Bake in the preheated oven until the tops are lightly browned, about 10 to 15 minutes. Allow mini quiches to cool in the pan before carefully removing with a small knife or spatula.
