INGREDIENTS
Vegetables
- 2 green bell peppers, diced
- 🧅 1 onion, chopped
- 🧄 6 cloves garlic, minced
- 1 bunch cilantro, finely chopped
Oils
- 3 tablespoons olive oil
Canned Goods
- 🍅 1 (15 ounce) can tomato sauce
- 2 (15 ounce) cans pigeon peas, drained
Spices & Seasonings
- 1 (.25 ounce) package Spanish seasoning
Grains
- 🍚 3 cups uncooked brown rice
Liquids
- 💧 6 cups boiling water
STEPS
Place green peppers, onion, garlic, and cilantro in a blender or food processor, and puree to create soffrito. Store any extra soffrito in an airtight container for future use.
Heat 3 tablespoons olive oil in a large saucepan, and cook 6 tablespoons of the soffrito for 3 to 4 minutes to release the flavors.
Mix in one can of tomato sauce and the Spanish seasoning packet. Stir well.
Add 3 cups of uncooked brown rice and stir gently until the rice is evenly coated with the mixture.
Stir in the drained pigeon peas and add the boiling water. Cover with aluminum foil and a lid, reduce heat to a simmer, and cook for 45 minutes or until the rice is tender.
