INGREDIENTS
Meat
- 2 pounds ground beef
- 6 slices bacon
Dairy
- 8 ounces sharp Cheddar cheese, cut into quarters
- 1 tablespoon Parmesan cheese
Eggs
- 🥚 2 eggs
Seasoning
- 2 tablespoons ketchup
- 1 tablespoon ketchup
- 1 teaspoon garlic powder
- ½ teaspoon kosher salt
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon ground black pepper
Other
- 1 cup dry bread crumbs
- 🧅 1 small yellow onion, diced
STEPS
Preheat an oven to 375 degrees F (190 degrees C).
Combine ground beef, eggs, 2 tablespoons of ketchup, bread crumbs, Parmesan cheese, garlic powder, salt, oregano, basil, pepper, and onion in a large bowl and mix well.
Line the bottom of a 9x13 inch pan with bacon widthwise. Place half of the meat mixture onto the bacon, lay some Cheddar cheese across the center, cover with the remaining meat, and mold into a loaf shape. Pull the bacon ends around the loaf and spread ketchup over the loaf.
Bake the meat loaf in the preheated oven until done and an internal thermometer reads 160°F (70°C), about 60 minutes.
Add sliced Cheddar cheese on top and bake until melted, about 5 minutes.
Let the meat loaf rest for 5 minutes before serving.
