INGREDIENTS

- 8 ounces breakfast sausage links, casings removed and meat broken up
- 🧅 ½ cup chopped green onions (light parts only)
- 🧅 1 tablespoon green onion green parts, for garnish
- ⅓ cup packed all-purpose flour
- 🥛 2 ½ cups cold milk
- 1 pinch cayenne pepper, plus more for garnish
STEPS
Melt butter in a large skillet or saucepan over medium heat. Add sausage. Cook, breaking sausage into small pieces, until browned, about 10 minutes. Add light green onion to the sausage mixture and sauté until soft, about 3 minutes more.
Stir in flour, 1 to 2 tablespoons at a time, until thoroughly combined and the mixture is pasty. Cook, stirring often, to remove the raw flour taste, about 2 to 3 minutes.
Whisk milk into the meat mixture, about 1 cup at a time, until combined. Continue to whisk until the gravy begins to thicken, about 5 minutes. Turn heat to medium-high and bring to a simmer. Season with cayenne pepper, salt, and black pepper. Reduce heat to medium-low.
Simmer the gravy, stirring occasionally, until the flavors have blended and the gravy is thickened, about 10 to 15 minutes. Garnish with green onion greens and a sprinkle of cayenne pepper.
