INGREDIENTS
Sauce
- 🥛 1/2 cup mayonnaise
- 🍅 1 1/2 tablespoons ketchup
- 1 tablespoon pickle relish
- 1 teaspoon sugar
- 3/4 teaspoon white vinegar
Caramelized Onions
- 🧈 1 tablespoon butter
- 1 tablespoon canola oil
- 🧅 3 cups yellow onions
- 3/4 teaspoons salt, divided
- 4 tablespoons water
Burger Patties
- 1 lb ground chuck
- 1 teaspoon canola oil
- 1/2 teaspoon black pepper
- 🌭 3 tablespoons mustard
- 8 slices American cheese
Toppings & Assembly
- 🍅 4 slices tomato
- 2 leaves iceberg lettuce, torn
- 4 sandwich buns, split and toasted
STEPS
Stir together mayonnaise, ketchup, relish, sugar, and vinegar in a small bowl to make the sauce.
Heat butter and 1 tablespoon oil in a nonstick skillet over medium heat. Add onions and season with 1/4 teaspoon salt. Cook, stirring occasionally, until onions are tender and golden brown, about 20 minutes.
Add 1 tablespoon water as needed to caramelize the onions fully, cooking for an additional 10-15 minutes. Remove from heat once onions are soft, browned, and jammy.
Shape the ground beef into 8 thin patties, about 3/8-inch thick and 4 inches in diameter. Season with pepper and remaining salt.
Heat 1 teaspoon oil in a cast-iron skillet over medium-high heat. Add patties to the skillet in batches as needed. Spread 2 teaspoons mustard over each patty. Cook for 2 minutes per side, until browned.
Top each patty with cheese and caramelized onions. Cover the skillet and cook for 30 seconds or until cheese is melted.
Spread the sauce onto the bottom halves of toasted buns. Add pickles, a slice of tomato, some lettuce, and a patty stack. Assemble and serve immediately.
