INGREDIENTS
Brownie Base
- 14 ounces bittersweet chocolate bar
- 2/3 cup cocoa
- 6 tablespoons canola oil
- 2 tablespoons vanilla extract
- 2 1/3 cups granulated sugar
- 1 cup packed light brown sugar
- 🥚 6 large eggs
- 1 cup all-purpose flour
- 2 tablespoons cornstarch
- 🧂 1 1/2 teaspoons kosher salt
- 1/2 teaspoon baking powder
Ganache & Topping
- 7 ounces semisweet chocolate bar
- 🥛 3/4 cup heavy cream
- 1 tablespoon unsalted butter
- 🧂 1/8 teaspoon kosher salt
- 1/4 cup rainbow candy-coated chocolate pieces
STEPS
Gather all ingredients.
Prepare the Brownies: Preheat the oven to 350°F (175°C). Line a 13x9-inch baking pan with foil and coat with baking spray.
Microwave chocolate and butter in a large bowl to melt, stirring every 30 seconds until smooth. Whisk in cocoa, canola oil, and vanilla extract.
Whisk sugar and brown sugar into the chocolate mixture. Add eggs one at a time, whisking smoothly after each addition. Fold in flour, cornstarch, salt, and baking powder until just combined.
Transfer the batter to the prepared pan and bake for 55-60 minutes until set. Cool at room temperature, then chill in the refrigerator for at least 1 hour.
Prepare the Ganache: Place chocolate in a bowl. Simmer cream and pour over the chocolate, whisking until smooth. Add butter and salt, then stir until glossy.
Invert brownie onto a cutting board and trim edges. Spread ganache evenly and top with rainbow candy-coated chocolates. Chill for 5 minutes.
Cut brownie into 12 pieces and make a crosswise indent on each piece using a knife.
