INGREDIENTS
Dough
- 2 ¾ cups all-purpose flour
- 🧂 1 teaspoon kosher salt
- 🧂 1 teaspoon baking powder
- ½ cup canola oil
- 💧 ½ cup warm water
- 🥚 1 large egg, beaten
- 1 teaspoon white vinegar
Filling
- 🥔 2 ½ pounds russet potatoes, peeled and quartered
- 8 ounces corned beef
- 1 cup finely chopped cooked cabbage
- 🧈 ½ cup butter
- 🧅 2 cups diced yellow onion
- 🧂 2 teaspoons kosher salt
- 1 pinch cayenne pepper
Assembly & Glaze
- 🥚 1 large egg
- 💧 2 teaspoons water
- 1 tablespoon olive oil
STEPS
Whisk together flour, salt, and baking powder in a large bowl. Make a well in the center and add oil, warm water, beaten egg, and vinegar. Mix until dough forms, knead until smooth, and refrigerate for at least 1 hour.
Boil and mash peeled russet potatoes, then set aside for filling.
Cook onions, corned beef, cabbage, and butter in a skillet until golden brown. Mix with mashed potatoes, season with salt and cayenne, and cool.
Preheat the oven to 375°F (190°C) and line 2 baking sheets with silicone mats.
Divide dough in half, roll out, fill with the potato mixture, and seal ends. Shape into individual knishes, brush egg wash on top.
Bake knishes until golden brown, about 40 minutes. Allow to cool slightly before serving.
