INGREDIENTS
Dairy
- 🥛 3 cups milk
Grain
- 🍚 1 cup Minute® White Rice, uncooked
Sweetener
- ¼ cup sugar
Dried Fruits
- ¼ cup raisins
Seasoning
- 🧂 ¼ teaspoon salt
- 1 teaspoon ground cinnamon
Binders
- 🥚 2 large eggs
Flavoring
- 1 teaspoon vanilla
STEPS
Combine milk, rice, sugar, raisins, and salt in a medium saucepan. Bring to a boil, stirring constantly. Reduce heat to medium-low and simmer for 6 minutes, stirring occasionally.
Beat eggs and vanilla lightly in a small bowl. Stir a small amount of the hot mixture into the eggs, then slowly pour the egg mixture back into the hot mixture while stirring constantly. Cook on low heat for 1 minute until thickened. Do not boil.
Remove from heat and let stand for 30 minutes. Sprinkle with cinnamon if desired. Serve warm or refrigerate any leftovers.
