INGREDIENTS
Dry Ingredients
- 1 ½ cups wheat bran
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 🧂 ½ teaspoon salt
Wet Ingredients
- 🥛 1 cup buttermilk
- ⅔ cup brown sugar
- ⅓ cup vegetable oil
- 🥚 1 egg
- ½ teaspoon vanilla extract

- ½ cup raisins
STEPS
Preheat the oven to 375°F (190°C). Prepare a 12-cup muffin tin by greasing or lining with paper liners.
Mix wheat bran and buttermilk in a large bowl. Let the mixture rest for 10 minutes to allow the bran to hydrate.
In another bowl, beat together brown sugar, vegetable oil, egg, and vanilla extract until fluffy.
Combine the wet mixture with the bran and buttermilk mixture.
Sift together flour, baking soda, baking powder, and salt. Stir into the wet mixture until just combined.
Fold in the raisins gently without overmixing the batter.
Spoon batter evenly into the prepared muffin cups, filling each about 2/3 full.
Bake in the preheated oven for 15-20 minutes or until the muffin tops spring back when lightly pressed.
Cool for a few minutes in the tin before transferring to a wire rack to cool completely before serving.
