INGREDIENTS
Dry Ingredients
- 🧂 ¾ cup granulated sugar
- 🧂 1 teaspoon baking powder
- 🧂 ½ teaspoon salt
- 🌾 2 cups all-purpose flour
- 🌽 ½ cup cornmeal
Wet Ingredients
- 🧈 5 tablespoons butter, melted and cooled
- 1 tablespoon vanilla
- 🥚 2 large eggs
- 🥚 2 egg whites
Mix-ins
- 1 cup snipped dried apricots
- 1¾ cups dry-roasted pistachio nuts, chopped and divided
Chocolate Dip
- 🍫 12 ounces bittersweet chocolate, chopped
- 1 tablespoon shortening
STEPS
Preheat oven to 325°F. Line a large baking sheet with parchment paper.
Stir together sugar, butter, vanilla, baking powder, and salt in a large bowl. Add eggs and egg whites, beating until evenly incorporated. Fold in dried apricots and pistachios. Gradually stir in flour and cornmeal. Let dough stand for 5 minutes.
Divide dough in half, shaping each half into an 8x4-inch loaf. Place loaves 4 inches apart and pat each to an even thickness.
Bake loaves for 24-28 minutes until light brown and firm. Cool completely, then slice into ¼-inch thick pieces.
Toast slices in the oven for 12-14 minutes, turning halfway through. Cool completely on a wire rack.
Microwave chocolate and shortening until melted and smooth, stirring every 30 seconds.
Dip each cookie in melted chocolate, sprinkle with pistachios, and allow to set on clean parchment paper.
