INGREDIENTS
Spices
- ¼ cup ancho chile powder
- 🧂 1 tablespoon salt
- 🧄 1 tablespoon garlic powder
- 🧅 1 tablespoon onion powder
- ½ teaspoon ground cumin
- ½ teaspoon chipotle chile powder
Liquids
- ⅔ cup canola oil
- 🍋 1 large lime, juiced
Main Ingredient
- 🍗 8 skinless, boneless chicken breast halves
STEPS
Combine ancho chile powder, salt, garlic powder, onion powder, cumin, and chipotle powder in a medium bowl. Whisk in canola oil and lime juice until well combined. Thin with more canola oil if needed.
Arrange chicken in a baking dish. Pour marinade over chicken, covering completely. Marinate in the refrigerator for 3 hours.
Preheat oven to 400°F (200°C). Line a baking sheet with aluminum foil.
Arrange chicken on the baking sheet without crowding. Discard excess marinade.
Bake chicken in the preheated oven until fully cooked, about 30 minutes. Use a thermometer to confirm an internal temperature of at least 165°F (74°C). Let stand for 5-6 minutes before serving.
